SIX WEEKS. THREE COUNTRIES. ONE TRIP OF A LIFETIME.

Matt and Shannon had an ambitious goal: to experience the very best of New Zealand, Australia and Fiji in a single journey.

What followed was a carefully curated six-week adventure spanning wildlife encounters, luxury lodges, world-class food and wine, tropical reefs, coastal escapes and some of the Southern Hemisphere's most spectacular landscapes. From shark cage diving in New Zealand's deep south to wildlife encounters on Kangaroo Island and unwinding on a remote Fijian island, every stop added a new layer to a journey filled with remarkable experiences and lasting memories.

Despite covering a huge amount of ground, the itinerary was designed to balance adventure with opportunities to slow down, recharge and truly experience each destination. The journey was intentionally full, but thoughtfully paced.

What they didn't anticipate was how valuable the quieter moments would become.

"When we figured out having every day planned was a little overwhelming after a few weeks, Jo had already thought ahead and scheduled in some days that turned out to be in the perfect spots for a do-nothing day."

Those moments became just as memorable as the headline experiences.

New Zealand: Deep South Adventures & Iconic Landscapes

New Zealand formed the first chapter of the journey and delivered an extraordinary mix of adventure, culture and scenery.

From Stewart Island and Ulva Island in the deep south to Milford Sound, Queenstown, Rotorua and the Coromandel, Matt and Shannon experienced many of the destinations that make New Zealand so special. Along the way, experiences ranged from shark cage diving in Bluff and exploring Hobbiton to wine tasting on Waiheke Island and discovering the country's geothermal heartland.

Among all the destinations they visited, New Zealand's South Island left perhaps the greatest impression.

"The South Island, Queenstown and Arrowtown were favourites."

Snow-capped peaks, alpine lakes, world-class wine regions and dramatic landscapes combined to create some of the most memorable moments of the journey.

Australia: Diverse Landscapes, Distinctive Experiences

Few countries offer such variety within a single journey. From the wildlife-rich coastline of Kangaroo Island and the renowned wineries of the Barossa Valley to Tasmania's dramatic coastal scenery, the tropical waters of the Great Barrier Reef and the energy of Sydney Harbour, Australia delivered a collection of experiences as diverse as the landscapes themselves.

Among the many highlights, one moment stood above all others.

"Sunrise on Kangaroo Island."

For Matt and Shannon, it was a reminder that some of the most memorable travel experiences are often the simplest. Watching the island come to life as the sun rose over its untouched landscapes became one of the defining moments of the journey.

Fiji: Remote Islands & Tropical Tranquillity

After more than five weeks of exploration, Fiji provided the perfect finale.

Beginning with a stay at Sofitel Fiji Resort, Matt and Shannon were then transported to a very different side of the country. Their final five nights were spent at Oneta Resort on remote Ono Island - a small family-run eco-resort perched beside the world-renowned Great Astrolabe Reef.

A little wild and deliberately off the beaten path, Oneta offered everything they needed to disconnect. Set beside one of the South Pacific's most pristine reef systems, their days were spent enjoying crystal-clear waters, exceptional snorkelling, abundant marine life and the relaxed rhythm of one of Fiji's most remote island escapes.

A six-week journey spanning three countries involves countless moving parts. While Matt and Shannon were busy making memories, Journey South was managing the details behind the scenes.
